    Doubt you will see this on an older post. Still wanted to chime in. My wife and I absolutely love your videos and have tried a few of your recipes with great success. I work in a family run pizza joint that also does calzones and to prevent that swelling and blowing out from the inside we rip a tiny whole in the top before we throw it in the oven. Gives it a little vent so the dough doesnt balloon to much before everything cooks and also adds a little character imo. Cant wait for your next post

    Hey Andrew! Im not exactly entitled to give you any culinary tips at all but I did work in a New York style pizza shop for a year. When we made calzones we used slices of low moisture full fat motz and cut a small slit on top of the calzone with a bread knife to prevent a dome like bubble. The dough wouldn’t inflate while cooking and would form to the fillings instead. Also the cheese wouldn’t melt into a smaller volume like shredded does. Just friendly ideas🤗love all of your content!

    It's my opinion and many others that it is the increase in carb consumption that is causing the overweight and obesity problems in tje USA. Please Babish, promote high protein, higher fat and green veg to help people lose weight. I am 6'3" was 260 lbs. Cut the carb intake to nearly nothing in April '19. Dec 3 I weighed 192. This shit is really bad for people.

    You need to poke 3 holes on top of the calzone before you cook. This will let the steam out and maintain integrity of crust when you cut. You also may want cut the heat a bit and cook slower!

    My big curiosity is why not vent the calzone to prevent the puffing? True, I never had a calzone when I lived in NYC, but in Buffalo at least, we always have them vented, and often with a more artisinal rolled finish to close the dough.

    I know I'm just some random but my job is a pizza shop and to avoid that doming you want to score the top. It will keep all your fillings nicely tucked in and comfortable and help reduce the moisture. Also some garlic butter painted over top with some white spice makes it all the much better. Love your show been watching probably since the begining.

    Here in Puerto Rico we add on the exterior of the breading some garlic butter for a crunchier outside texture and it really makes the difference 🤩
