Guga i just thought about something either interesting or completely crazy. What if you took the fat off of the picanha, dry age it as you did and then with meat glue stick it back into the dry aged picanha..? I would like to hear your thoughts on that crazy idea!!

I hope you see this guga, trim the fat off a regular picanha and freeze it , when you are finished trimming the dry age cut, put the frozen fat on with skewers and cook them .

  • Shin Kintsurugi
    Shin Kintsurugi 5 days ago

Guga, bro, consider this: Remove the fat and freeze it. Dry age the picanha. Defrost the fat, reverse sear the picanha in the fat.
Or dry age the steaks in a butter/picanha fat shell.

I've watched a few of your videos today, gonna subscribe after this message but if you like it dry aged but also with the fat try dry aging it in the butter herb method that I watched earlier so you don't lose the fat to trimming.
