Carla Makes an Apple Tart | From the Test Kitchen | Bon Appétit

  • Join Carla in the Test Kitchen as she makes an apple tart! This unadorned tart bakes at a fairly high temperature and boasts a deeply browned crisp crust. The apples at the bottom of the tart are insulated from direct heat, so they steam and soften into a very tender layer. The ones up top hold their shape, which means you’ll get a mix of textures in each bite.

    Looks yummy, but really, why waste the extra crust? Should always bake the scraps of crust next to the pie/tart so you can munch them too...

    I like to slice my cold butter really thin and add it to my flour instead if doing that first rolling technique. I think rolling out between 2 sheets of parchment reduces extra flour and I think that helps prevent cracking around the edges. I really want one of those rolling pins... looks perfect. I love Carla videos!

    I tried to convert the ingredients for the dough into grams. so 1 cup flour (~125 g) and 1 stick butter (115g) is a nearly 1:1 ratio. is that right?

    What works just as well is if you do the dough all on plastic wrap and use the plastic wrap to flip and fold. You get the same shards of butter incorporated in the pâte brisée for extra flakiness and no flour everywhere.
