I love the friendly banter and joking between everybody there. It's such a layed-back environment.
Seems like it would be less stressful than going super ultra pro chef with a cooking show.
    I love the casual atmosphere.

I understand restraining the ingredient count but I would have had: turnips, carrots, red potatoes, celery, onion, garlic, and peas. And i'd also add chicken broth to the roux to add a little more chicken flavor.

I've never had a turnip in my over 50 years. Pretty sure I have similar taste buds to Carla so - in no rush to try this... But sweet hippie-love-child Molly has convinced me to... try before I die.

I must admit I always use leeks instead of onions and add mushrooms and Stead of carrots in my chicken pie. I always buy more leaks than I need for the recipe and then chop and freeze what I don't use. So when I'm in a rush I just had a bag frozen leeks to the chicken instead of onions. I use small mushrooms halfed because they are quicker to prepare and carrots or turnip. Either use frozen peas or frozen sweetcorn depending on what I've got in the freezer at the time. I always seem to be in a rush when it comes to mealtimes.

I never thought turnip was a particularly polarizing vegetable, but apparently so. As a Scot, I've eaten my fair share of turnips, and while I generally like the flavour there certainly is an art to cooking them well. Boil them for too long and they take on a fibrous texture that can be really unpleasant. I hadn't thought to cook them this way before, so will definitely try it out

  • Monica Horton

Carrots provide a fresh, slightly sweet, addition to chicken pot pie. The carrots are supposed to be crisp, every time. It adds great texture when done correctly. I never let my carrots get soggy. Turnip is too earthy and gritty and doesn't go great with grainy-ness of peas. Its like adding parsnips to a recipe instead of carrots. It's only good if earthy is you goal and i don't want that in my hearty potpie.

Chicken is hen or rooster? Which one is taste better?

    • Kevin Crist
      Kevin Crist Month ago

Chicken is the species. Hens are female. Roosters are male. As far as taste you want to look at how they're marketed, ie capon, roaster, etc. Each has their own use, but for every day purposes there isn't a huge difference.
Could be wrong, but I think that's the gist.

Sweet potato is also a good sub for carrots. I have never had a turnip, but I do make chicken pot pie from scratch about every two months. Dried herbs de Province and a pastry I make that is somewhere between a biscuit and a traditional pie crust brushed with cream or an egg wash if you want. I tend to make it in a large cast iron skillet since I feed a family of 8. Filling is whatever chicken I have sauteed in butter then with sweet and white potatoes and whatever other veggies I have.

I use Rutabega, and carrots, but not turnips in mine. It's a farmer's dish. Classically, you use whatever you got in the garden, but it's seasonal. If you're going to the grociery store, and you don't like turnips, sub Potatoes, or something, but I have to have carrots in my mirepoix, and peas in my pot pie. That's me, frosen peas are just fine, don't use canned ones. They turn into mush.

"Besides the fact that there aren't carrots in this dish, it is a pretty classic iteration..." --- She used heavy cream instead of a rue, brushed the crust with cream instead of an egg wash, cooked with wine, baked it in a skillet. And then there's the turnips. This is far from a classic iteration of a pot pie.
